Fennel, Lililup and basil salad

Ingredients

  • ½ a fennel
  • ½ a Liliup melon
  • Basil leaves
  • 3 tablespoon of extra virgin olive oil
  • 2 tablespoons of agave syrup
  • 1 teaspoon of salt
  • Chopped hazelnuts to serve
  • Chilli flakes

Method

  • • Cut the fennel in half, wash it and slice it thinly using a mandolin slicer. Cut the Lililup melon in half, remove the seeds and cut it into slices.
    • Mix the fennel and melon together in a dish and add the dressing. Then add the chopped basil and hazelnuts. Serve immediately.

This salad is easy to make and filled with flavours and textures. The juicy Lililup melon slices are covered with basil leaves and fennel, and sprinkled with crunchy chopped hazelnuts and a dressing of olive oil, syrup and chilli; try it with your next lunch or dinner.
