Lililup melon and ginger soup

  • 1 Lililup melon
  • Juice of two lemons
  • 1 teaspoon of ground ginger
  • Mint


  • Cut off the top part of the melon and hollow it out. Carefully use a spoon to to remove the flesh of the melon. Cut or scoop it into little balls and set to one side. Put the remaining melon flesh into a blender. Turn your melon into a bowl.
  • Mix together the lemon juice, ginger and the remaining melon, and blend it all together. Put the mixture into the melon bowls and leave to rest for a few minutes.
  • Serve the ginger soup in a bowl with a few mint leaves.
