Lililup filled with Labneh, pistachios and pomegranate

Ingredients

  • 1 Lililup melon
  • 2 soya or coconut yoghurts (125ml each)
  • 1 teaspoon of salt
  • Juice of one lemon
  • 2-3 tablespoons of crushed pistachios
  • Pomegranate
  • A dash of date or agave syrup to finish

Method

  • Pour the yoghurt into a nut milk bag or muslin cloth, then close up the gauze or bag by tightly rolling the upper part. Place a sieve over a bowl, then place the bag or cloth above the sieve. The aim is to remove all of the liquid from the yoghurt.
  • Leave it to drain for 12-24 hours. Once this time has passed, put the drained yoghurt in bowl and mix it with the salt and lemon.
  • Cut off the top part of the melon and hollow it out. Carefully use a spoon to to remove the flesh of the melon and set it to one side. Turn your melon into a bowl.
  • Put the labneh into the melon bowl, add a little lemon zest, pistachios, pomegranate and a dash of syrup.
