Lililup, persimmon and avocado tartar

Ingredients

  • ½ a Liliup melon
  • ½ a persimmon
  • ½ an avocado
  • 2 tablespoons of agave syrup
  • Juice of half a lemon
  • 1 teaspoon of ginger
  • Edible shoots and mint to serve

Method

  • Cut the Lililup melon in half, remove the seeds and peel off the skin. Cut it into cubes and use them as the base of the tartar. Do the same with the persimmon and avocado.
  • When you have 3 layers in the tartar mould, add the edible shoots and mint.
  • In a separate bowl, mix together the lemon juice, syrup and ginger, then drizzle over the tartar.
  • Remove from the mould and serve with lemon.
